Cut Description

This product is obtained from the flat (item 2467). All sub-cutaneous and intermuscular fat, connective tissues, membrane and the silverskin on the flat are removed. After these procedures, the muscular tissue is exposed as red meat, that is completely free of visible fat and external connective tissue.

Muscular Component:
M. BICEPS FEMORIS.
Processing:
THE FLAT IS PREPARED FROM THE OUTSIDE (ITEM 2466) BY THE REMOVAL OF THE EYEROUND (M. SEMITENDINOSUS), CUTTING THROUGH THE CONNECTIVE TISSUE BETWEEN THE M. BÍCEPS FEMORIS AND M. SEMITENDINOSUS. EXCESS FAT DEPOSITIONS ARE REMOVED.
