the striploin and ventrally
the rib cage (plate).
Skeletal Components: ITS SOLE COMPONENT IS THE CUTANEOUS TRUNCI,
WHICH IS A FLAT, NON SKELETAL MUSCLE,
UNDERLYING THE SKIN. THIS MUSCLE COVERS MOST
OF THE RIB CAGE EXTERNAL SURFACE .
Processing: AS M. CUTANEOUS TRUNCI IS FIRM LY ADHERED
TO THE BEEF SIDE, IT MUST BE REMOVED WITH A
KNIFE.
