Cut Description
It is the abomasus which is the bovines
glandular stomach. May be processed
for human consumption (piloric region)
or for industrial purposes (glandular
region). For the former, as described
in item 609, while for the latter it
may be dried or frozen by laboratories
to manufacture rennet powder.
