Cut Description
It is made up of the rumen and the
reticulum (honeycomb) and can be
prepared according to the following
specifications:
-Raw Tripe, which is merely washed
in chlorinated water to remove
the remaining intake.
-Semi-cooked, in boiling water for
40 to 45 minutes. Alternatively,
may be bleached by using hydrogen
peroxide.
-Cooked, in boiling water for 50
to 55 minutes and bleached by
means of hydrogen peroxide.
